Well it’s Use it or Lose it time again

Mr. P isn’t one for leftover (he doesn’t like to use the microwave as he thinks it unhealthy) so unless I eat it in the next couple of days for lunch it gets tossed Saturday morning before garbage pick-up. (We are very lucky to live in a hamlet that actually has garbage pick-up vs hauling our garbage to the dump ourselves or burning it.)

I have been trying to cut down on portion sizes meaning there is now usually only enough for lunch the next day or nothing is leftover at all.  This is easy with meat and veggie, but a little harder with starches. However, if say I have enough rice left over for another meal, I use it as the starch within a couple of days and heat it up in the evil microwave or on the stove top. Opposed to making new when perfectly fine leftover rice is in the fridge (common sense right) So far Mr.P has been okay with this and so far this week there are no left overs sitting in the fridge. Go team…lol

Used it up

2 jars of salsa from the cold room
4 onions from the closet onions..lol
2 packages of steak from the beef we had butchered
Pumpkin and carrots from mother in laws garden Pureed for lil pickle froze into ice cubes and got 1 large Ziploc bag full of each
Pureed left over chicken, cauliflower, pork, and asparagus for lil pickle. Had enough pureed of the last 3 to make 8 ice cubes. (You’d think those three ing together would taste gross, but not too bad)

Lost it
10 kiwi’s this was a tough one we bought them from Costco almost 2 weeks ago and the suckers are still hard as rocks. The taste old too so they will be hitting the garbage
Celery- the bag got frozen in the fridge and went too mushy 5 stalks were lost

So all in all not a lot was used from the pantry, cold room and freezer, but better than last week.

Here is the star recipe of the week that I tweaked from a few other recipes to make my own. In the summer we grill the meat and veggies on the grill. It adds a whole new flavour.
I forgot to take a picture but it was really yummy!!

Steak Fajitas 
4 sirloin steaks sliced thinly
2 tbsp. extra virgin olive oil
1 red pepper sliced
1 yellow pepper sliced
1 medium onion sliced
1 tbsp. homemade taco seasoning (can use the same amount of store bought)
Salt and pepper to taste
1 cup of salsa
Sour cream
1cup of shredded cheddar cheese
4 flourTortilla
In a medium sauce pan heat the oil. Add the beef and brown until no pink shows
Add peppers, onion, taco seasoning, salt and pepper. Cook 5-7 mins until veggies are soft and beef has reached your desired doneness. Add salsa and stir until heated.
Put your desired amount of sour cream and cheese on your tortilla, top with beef mixture and enjoy
