Thursdays Kitchen Cupboard

Wow I can’t believe it has been a week since I posted. I know I said I had gotten off track last week, but I will be honest this past week wasn’t any better. I really hope things will be better this upcoming week and I will be able to get a few more things done to post about! I also haven’t been able to read many blogs or leave comments. I have skimmed though a lot in reader, but just not enough time to really give them all a good read. I should have lots of time now though!

I did get a few things done in the kitchen. I finally had enough ripe tomatoes to make tomato sauce. Last year I did everything by hand using a food mill....it took FOREVER and my arm hurt for days. This year I used this little attachment on my meat grinder...it work oh so well!!!

 I ended with a sauce a bit thinner than I had wanted, even after cooking it down by half. However I got 7 x 500ml and 1 x 1L out of 35lbs of tomatoes. Now I am not sure if I want to make sauce again since it is a lot of work for such a little pay out. However, it does beat peeling and coring to make just about anything else with tomatoes..lol

I also shredded up the last of my zucchini I ended up with 10 4c bags. 


The carrots made their way from the garden to the freezer this week as well. I ended up with 11 2c bags. 


And that is about all that was going on in the kitchen this week. I still have around 50+lbs of tomatoes slowly ripening so I think I shall be able to get one more batch of salsa and then maybe tomato sauce or crushed tomatoes.

  1. It does take a while to boil down sauce. Mine was always so much better that I thought it was worth it. I guess that is the good part about not eating tomatoes anymore. I don't have to make sauce in the heat of August.

  2. My mother in law canned and froze the same vegetables as you. I froze zucchini the first time last year (love zucchini bread) and it was very mushy and wet after thawing. I used freezer bags, squeezed out any air. It was fresh from the garden. Perhaps you could tell me where I messed things up. Thank you Mrs. Pickles!

  4. Home canned tomato sauce is the best and definitely worth all the work. You will definitely enjoy that sauce this winter.

  5. I didn't get enough large tomatoes to can this year, so the small ones all went into sauce and ketchup making. I'll be going to the store for my diced tomatoes this winter :-(
