A few more spinach recipes
As of today the spinach is is officially out of the garden. I had thought it might still produce since it was not really bolting, but I think it has gone through its growing cycle so I yanked it out.
Here are the last to recipes I was able to make with the last of our fresh spinach
Fruity Spinach Salad with strawberry vinaigrette
6oz fresh spinach
1 mandarin orange, toes cut in half1/2 a nectarine
1/4c toasted pecans
Strawberry Vinaigrette
1/2c halved fresh strawberries
2 tbsp balsamic vinegar
1tbsp maple syrup
1/4c of olive oil
In individual bowls combine the spinach, orange, nectarine and pecans.
To make the vinaigrette combine the first 3 ingredients using a hand blender until smooth. Add oil in a steady stream while continuing to mix until well blended
Drizzle dressing over salad.
Drunken Harvest Pork and Pasta (inspired by guy fieri)
2Tbsp Olive Oil
1 small onion, chopped1/4c white wine
2 cloves of crushed garlic
2 boneless pork loin chops cut in half lengthwise
1tsp garlic powder
1tsp sea salt
1c white mushrooms
1 medium zucchini cut into 1ich pieces
1 can of diced tomatoes
1 cup chicken stock
2 cups of fresh spinach (frozen ca be substituted)
1 cup half and half
3 tbsp vodka
4c fusilli pasta, cooked
In a large pan over medium heat cook the onion in oil for 5-6mins or just until it starts to brown. Add garlic and white wine and cook for another 2 mins. Season the pork with garlic powder and sea salt. Add the pork to the pan and cook 3 mins on each side. Add the mushrooms, zucchini and tomatoes along with the chicken stock. Bring to a boil and cook for another 5mins. Add spinach and cream and cook for another 5mins.. Add vodka and combine. Place cooked pasta in individual serving bowls and top with one chop and some of the veggie mixture. Alternatively you can add the pasta to the sauce combine till well coated and serve family style.
