Preserving the harvest 2012


Yesterday I showed you all the canning that I got done for 2012. Today I am going to show you everything that I froze for 2012. There are a couple of pictures that I cannot seem to find, but for the most part I think this is everything.
Okay starting at the top left and going clockwise: Chives, cauliflower and broccoli,Broad beans, zucchini  Rhubarb  Carrots, Spinach, Zucchini, spinach zucchini, broad beans, cauliflower and cauliflower broccoli

This year I had a really hard time preserving fruits and veggies from the garden since I just did not have the energy to do very much. I really pushed myself to at least get something done so it did not all go to waste and therefore beat myself up even more. Looking back I am a little ashamed of how little I canned/froze, but something is better than nothing!!

  1. Don't feel down about what you see as a poor harvest - see every meal that you have with delicious home grown veg as a success: 'Look, *we* did that, and it is healthy and local and we didn't spend money on buying it!'

  2. One year I had mono over the summer (undiagnosed, but I think that is what it was). I didn't even plant my garden that year. I was too tired for anything. You know those google images from the road that they take? Well that was the year they took road pics of my house. And if you look it still is just one pile of weeds. I think they do that just to annoy me. We all have our bad years. But you did get some things frozen even if it was all that you wanted.

  3. Don't beat yourself up! You did fantastic. And think of how great it's going to feel to eat home grown veggies in the dead of winter. Yummy!
