Thursdays Kitchen Cupboard 01/02/12
This week there was a lot going on in my kitchen. As I said last week I really wanted to try and use as much of last year’s harvest as I could from my pantry or freezer. I did not do as good as a job I wanted to. Part of that was that I only remembered that I was trying to do that on Monday night...lol Oh well
I did use cauliflower, sliced carrots, shredded carrots, green beans, onions, salsa, vegetable soup and tomato sauce this week. So I did make a wee little dent in all of 2011 harvests. However, all of that was just from 2 days....LOL So this week I plan on being a little more proactive in trying to use up last year’s harvest.
One of the highlights from the kitchen this week was the carrot and bran muffins I made. I wanted to try and use honey instead of sugar. The end result is they taste like they need sugar, but I think natural honey is a bit better than brown sugar.
Here is the recipe that I got from the Bee Maid Honey Website
Carrot Bran Muffins
2c flour
1tbsp baking powder
1tbsp baking soda
2tsp Cinnamon
1tsp salt
1 1/3C bran
2c grated carrots
1/2c raisins
3/4c honey
3/4c milk
1/2c oil
3 eggs
In a large bowl sift together flour, baking powder, baking soda, cinnamon and salt. Stir in bran, carrots and raisins. In a separate bowl beat honey, eggs, milk and oil
Make a well in the dry ingredients and pour in the liquid. Stir until just moistened. Spoon mixture into grease muffin tins, filling 2/3 full. Bake at 350F for 20-25mins. Make 24

ReplyDeleteMe too, I keep forgetting what I have in the freezer and in storage Like Robin suggested need to make a list but first I need to organize the freezer.

ReplyDeleteI don't have a problem using things up as I live from my freezers and pantry. Trips to the market are very seldom unless something is on sale that I need and to get milk and eggs.
ReplyDeleteI have an inventory of my freezers and pantry yet to make it to a spread sheet. However, I do a monthly menu which doesn't always get followed, but when I do it I use my inventory to plan my meals.
Liz- I thought the whole idea of carrot muffins was pretty gross, but I am really enjoying them and would make them again for sure!
ReplyDeleteJody-I thought I would try a healthier version, but I do miss the brown sugar. I dipped one in sugar and it was yummy..LOL I really thought i would miss the taste of butter in them, however they taste very buttery..LOL
Norma- I think I need a HUGE red sign on the door going to the basement that reminds me to use what i have stored!
Wilderness-I think i need to stay with you for a month or two for a pantry/freezer bootcamp!
